



From Bean to Cup
The taste of the prepared coffee is influenced by many factors, starting from the region where the beans come from, their variety, the way they are processed, through the methods of roasting the beans in coffee roasteries, to the final link, the place where it is prepared - its technology, the quality of the equipment and the skills of the barista. Check out the attention to detail we pay to provide you with a comprehensive sensory experience in every cup of coffee!

01. Grain selection
We cooperate with both Polish and foreign roasteries to provide the greatest possible variety and quality of coffee taste. In our permanent offer you can find beans from the local roastery Mała Czarna, seasonal beans
from the Warsaw roastery Story, and decaffeinated coffee, which we serve from a pressure coffee maker. In alternative methods, we use lightly roasted beans, rotating their origin, processing method
and roasteries such as Blend, Story, Roasteins, Hayb or foreign roasteries that we brought to Poland for the first time - Olivo Coffee Culture or Aliena. On our shelves and in your cups you will find only specialty quality coffees, i.e. the highest quality!
02. Water
If you think that water does not affect the taste of the prepared coffee, you are very wrong! Not everyone pays due attention to such an important ingredient as water, which constitutes over 90% of the prepared drink, so why should we ignore its taste? In order to guarantee the highest level of purity, to deprive the water of unwanted aftertastes coming from, among others, chlorine, to select the appropriate level of minerals that will affect its sweetness and acidity and to ensure the appropriate degree of softness, we use a multi-stage level of filtration. A water softening station, specially selected column filters and the pearl among water systems, i.e. reverse osmosis with remineralization, are responsible for the impeccable taste of our water.


03. Equipment
The quality of the grind, the right grammage, the water temperature and extraction are extremely important elements of the entire coffee preparation chain. To achieve the right parameters, reliable equipment is needed at every stage, which is a tool for the work of a barista. On our board there are top grinders, such as Mahlkonig EK43 used in the most important world competitions or Mahlkonig E65s GBW with a Puqpress tamping station, responsible for perfect grinding and preparation of coffee for espresso in the best cafes in the world.
The heart of the café, the Ascaso brand coffee machine, which came to us straight from Barcelona, is responsible for the proper extraction. The reliable Fellow Stag EKG kettle is responsible for the proper temperature of the water used in pour-over methods, and the whole thing is connected by a special device for measuring the density and extraction of coffee called a refractometer, thanks to which the recipes of our coffees are buttoned up to the last detail.
04. Ceramics
We are big fans of craftsmanship, because each item becomes unique and presents a part of the creator who put their work into its production. Therefore, we focused on hand-made ceramics from independent creators, to complement the complexity of the sensory experience of each cup of coffee served. Behind the small works of art are three creators, who created unique designs especially for us that reflect the character of the café - Ceramiczności, Kropky Ceramics and Melody of Ceramics.


05. People
What would all the previous points be without the baristas who prepare all these delights for you? We meticulously select people for our team, take care of training and improving our skills, which translate into the quality of the products we serve. We ensure the standards we have developed, paying attention to all the details from grinding coffee to finishing it in the style of latte art. Understanding coffee requires a combination of many fields of science, such as mathematics, chemistry and physics, as well as organoleptics and passion for creating and creating. Determining the appropriate grammage of coffee, the content and transformation of compounds contained in it, or the method of extraction and its impact on the final taste, turn such an inconspicuous and everyday cup of coffee into a real cocktail of knowledge and skills. In addition to skills directly related to the preparation of coffee and other drinks in our menu, we pay special attention to hospitality, kindness and openness to other people.
